Carrot & Ginger Cake
Ingredients
- 225g/8oz plain flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 tsps. ground ginger
- 1/2 tsp. salt
- 175g/6oz light muscovado sugar
- 225g/8oz carrots (grated)
- 2 pieces stem ginger in syrup (chopped)
- 6g/2ozs raisins
- 25g/1oz fresh ginger grated
- 2 medium eggs beaten
- 3 tblsps corn oil
- Juice of 1 orange
To Decorate
- Grated carrot stem ginger ground ginger
Frosting
- 225g/8oz low fat soft cheese
- 4 tbsps. icing sugar
- 1 tsp. vanilla extract
Oven 180°C/350°F
8"round tin lined
Sift flour, baking powder, baking
soda, ground ginger & salt into bowl. Stir in sugar,
carrot, stem ginger, fresh ginger & raisins.
Make well in centre. beat together eggs, oil &
orange juice and add to dry ingredients. Mix well
and place in tin.
Bake 1-1½
hours.
Cool in tin.
