Carrot & Ginger Cake

Ingredients

  • 225g/8oz plain flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsps. ground ginger
  • 1/2 tsp. salt
  • 175g/6oz light muscovado sugar
  • 225g/8oz carrots (grated)
  • 2 pieces stem ginger in syrup (chopped)
  • 6g/2ozs raisins
  • 25g/1oz fresh ginger grated
  • 2 medium eggs beaten
  • 3 tblsps corn oil
  • Juice of 1 orange

To Decorate

  • Grated carrot stem ginger ground ginger

Frosting

  • 225g/8oz low fat soft cheese
  • 4 tbsps. icing sugar
  • 1 tsp. vanilla extract

Oven 180°C/350°F

8"round tin lined

Sift flour, baking powder, baking soda, ground ginger & salt into bowl. Stir in sugar, carrot, stem ginger, fresh ginger & raisins.

Make well in centre. beat together eggs, oil & orange juice and add to dry ingredients. Mix well and place in tin.

Bake 1-1½ hours.

Cool in tin.
