MANDY BAXTER, 46, is the proprietor of Pollini boutique in Moira. Originally from Northampton she has lived locally for 27 year. She loves her job and is always thinking of ways to improve herself and her business and has two sons who keep her on her toes.
What do you like doing on your day off?
Browsing the shops, meeting friends for lunch and enjoy cooking when I have
time. I am a Jamie Oliver fan.
If you were to choose your favourite meal what would it be, where and
why?
Indian food every time in London, in Mayfair at the famous Tamarind
restaurant.
What has been your proudest moment?
My two sons being born.
What was the most frightening moment of your life?
When my youngest son was very sick when he was 6 weeks old and nobody knew
what was wrong with him for three weeks.
How would you describe your taste in clothes?
Classic.
What would you do if you won a million pounds?
Help all the people who have been good to me in my life. Then invest and
enjoy the rest.
What music do you like?
I am loving Adele at the moment - she is brilliant.
What sports person do you most admire?
I admire Mary Peters for what she achieved and for what she still does for
others.
Describe your best ever holiday. What would your dream holiday be?
Venice has to be my favourite because I went with a crowd of friends to
attend our mutual friends wedding there. It was the most romantic wedding I
have ever been to and could not be matched for the ambiance Venice offered.
Dream place would be a safari holiday in Africa.
What is your greatest remaining ambition?
To have that dream holiday.
